“In 2004 I bought an abandoned vineyard where Goldmuskateller was grown.

I had decided to eliminate it but I tasted the grapes and I couldn't help thinking that the result would be a fashionable, light and drinkable wine, to be tasted as an aperitif.”

The Goldmuskateller It is a white grape variety, probably brought from Greece to Italy in the Middle Ages. Its berries have a very intense golden yellow skin, with an unmistakable scent. This variety requires sunny soils to best express the intense aroma typical of its grapes.

Vinification
The grapes, which have reached perfect ripeness, are picked by hand in the cool hours of the morning and taken to the cellar.
Here the berries are separated from the stalks and crushed. The must obtained, after a first decanting, is placed
in fermentation tanks at controlled temperature.

Aging technique
The wine remains on the fine lees in stainless steel barrels for at least 6 months.

Store the bottle in a horizontal position in a cool place, with high humidity and constant temperature.
Make sure it is well protected from light.

Ideal to be tasted as an aperitif but also in combination with fresh appetizers and first courses based on rice and vegetables, as well as recipes from Asian cuisine. It enhances the taste of soft cheeses, both cow's and goat's milk.
