The Sauvignon It is a white grape variety, it comes from the French area of Bordeaux and currently one of the most common in the world. He entered South Tyrol towards the end of the 19th century where, in recent years, he has been able to conquer an important part of the territory. It is a semiaromatic grape, from which wines with a more or less intense straw yellow color are born with floral and fruity notes and typical scents of freshly cut grass, gooseberries, nettles, musk and elderberry.

Vinification
The grapes, which have reached perfect ripeness, are picked by hand in the cool hours of the morning and taken to the cellar. Here the berries are separated from the stalks and crushed. The must obtained, after a first decanting, is placed in the fermentation tanks at a controlled temperature.

Aging technique
The wine remains on the fine lees in stainless steel barrels for at least 6 months.

Tasting Notes

colour
Brilliant light yellow with soft greenish reflections.

Perfume
The aroma is fresh, the nose has plant scents with notes of mint, gooseberry and green grass.

With a fresh and strong taste with delicate aromas reminiscent of gooseberries and green pepper.

Information for storing and consuming wine
Store the bottle in a horizontal position in a cool place, with high humidity and constant temperature.
Make sure it is well protected from light.

8-10°C

Glasses for young wines.

Pairings
It goes perfectly with asparagus-based dishes, both white and green,
as well as vegetarian recipes based on crustaceans and raw fish.
Also to be tasted together with fatty and creamy cheeses.
