“I have worked with the soil all my life: I know the various grape varieties and what they need to produce the best results. I grow the Sauvignon grapes on a site that is ideal for aromatic and fruity wines – just the way I like it.”
Sauvignon is a white grape variety from the Bordeaux region of France that is now one of the most widely cultivated worldwide. The name derives from the French word “sauvage”, meaning “savage”. Sauvignon grapes have been grown in South Tyrol since the end of the 18th century, becoming increasingly widespread in the course of time. The aromatic grapes are used to make wines that are straw yellow in color and combine floral and fruity notes with aromas of fresh hay, gooseberry, elderberry, moss and nettle.

Winemaking | The fully mature grapes are brought in in the early morning. They are carefully de-stemmed and crushed. The must is then transferred to fermentation tanks and stored at a controlled temperature. |
