Il Pinot Grigio – a mutation of Pinot Noir – started its career in the Bordeaux region of France and has become one of today’s international grape varieties. It was introduced to South Tyrol in the 19th century and is now the commonest grape variety there. It is used to make white wines that are full-flavored on the palate and warm and floral on the nose.

Winemaking | The fully mature grapes are brought in in the early morning. They are carefully de-stemmed and crushed. The must is then transferred to fermentation tanks and stored at a controlled temperature. |
Maturing | At least six months on the lees in stainless steel tanks. |
